Heritage Meat Chickens:  

Please keep in mind that our chickens are NOT the Cornish/Rock cross, and as such they are slower growing and a richer tasting bird with a leaner breast and more proportional body shape.  Having been raised on pasture, they tend to cook slightly faster (I usually reduce the cooking time by 10%) than a commercially-raised bird would.  Now that it's winter, all our birds have been frozen from our last fall processing.  They will be available until they are sold out! 

Whole Birds:  $4.05 / lb

Split Breast (includes skin & bone):  $7.95 / lb (packed 2 breasts per pack)

Boneless, Skinless Breast:  $10.95 / lb  (packaged 4 breasts per pack)

Leg / Thigh:  $4.95 / lb (packed 4 legs & thighs per pack)

Hearty Chicken Stock:  $5 / quart (made from our roosters, it is slow cooked for 5 days to bring out a rich flavor.  Contains only roosters, water, sea salt, carrots, onion, celery and parsnips)

Chicken Livers:  $5.29 / lb (packed in 1-2 lb bags)

Stewing Roosters:  $8 each (typically 3 to 4.5 lbs)

Chicken Eggs (from our pastured, laying birds):  $4 / dozen (or $3.50 / dozen on the farm with the return of a carton)

Duck, Guinea Hen & Ground Turkey:  

Whole Muscovy Duck:  $30 (typically 4.25 to 6 lbs)

Boneless Duck Breast (not skinless):  $13.99 / lb 

Whole Guinea Hen (2.75 - 4.25 lbs):  $24

Ground Heritage Turkey:  $5.99 / lb (1 lb packs)

Grass-Fed Lamb:

Canter Hill sells our lamb in cuts, cryovac sealed and flash frozen by our USDA butcher.  The below cuts represent our "standard" options, but we can accomodate special requests.  We typically process lamb 3 to 4 times a year, so please provide significant advance notice.  The lamb "season" on the farm is twice yearly - the early spring, when we process lambs that were born in the fall of the previous year, and the late fall, when we process those that were born in the spring.  Please consider ordering ahead or purchasing and keeping lamb in your freezer in order to enjoy Canter Hill Lamb throughout the summer and winter months, as we typically sell out very quickly.

Note:  We are frequently asked about the sale of whole lambs.  We maintain a "lamb alert list" of those interested in whole lambs.  When we schedule a processing, we assess whether we have more lambs than needed, and send an email to this list.  Reservations are taken on a first-come, first-serve basis.  We provide a cutting list for you to select the cuts you would like, and the price of the lamb is based on the hanging (pre-cutting) weight, since this is uniform (it's not affected by the cuts you choose).  The hanging weight price INCLUDES the butchering and packaging cost, as well as the dropoff and pickup.  You would then come and pick up your lamb at the farm (neatly packaged for your freezer).  If you would like to be on a whole lamb alert list, please email us and we will let you know what is available and what the pricing will be as we approach April of 2012.

Thanksgiving Turkey:  

We raise only Heritage Turkeys hatched on our farm.  Heritage birds are extremely flavorful and healthy, but will run far smaller than a hybridized commercial breed.  Weights will range from 8 to 17 lbs. 

Whole Heritage Turkey:  $9.25 / lb

Turkeys are processed the Monday before Thanksgiving and are picked up on Tuesday evening at our farm between the hours of 6 to 8:30 pm.  Please, please, please be sure that you can arrange pickup within the time window as there is NO option for early or late pickups this year.  We are currently accepting turkey orders and take them on a first-come, first serve basis.  See the link for Thanksgiving Turkeys for detailed information.  Turkey orders are secured with a non-refundable deposit of $30 that is put towards the total price of the bird.  All birds are sold fresh, NEVER frozen.
